Red Wines
	Preservative Free Dry Red Wine is available! A truly delicious wine full of flavour, a great choice for the health conscious wine consumer! The following tasting notes are for current or recent release wines only, if you would like notes on a back vintage email: trina@botobolar.com.

2007 Preservative Free Dry Red Shiraz and Cabernet sourced from Broombie Organic Vineyard - Mudgee Rosnay Organic VIneyard - Canowindra Colour Deep Purple with rose tinges Nose Big sweet, spicy, cinnamon and cedar, with floral overtones Palate Sweet ripe berry fruit, with nutty characters. There is a zippy tang on the tongue, lovely soft rounded tannins and an easy lingering finish. This wine is a great choice for the health conscious. Enjoy with your favourite winter soul food. Analysis Alc:13.5% Sulphur Dioxide: 0ppm	2003 'The King' 50% Cabernet Sauvignon and 50% Shiraz Colour Lincoln Rose Red Nose Sweet perfume with cedar Palate Sweet berry fruit with baker's chocolate and spice, bold tannins that will soften with decanting or cellaring. Sealed with a 'Diam' cork to enhance cellaring potential. The 2003 King is a true bold Botobolar wine style reminiscent of the 1999 vintage. The wine spent two years in American Oak Barriques and was bottled in December 05. We recommend medium term cellaring to truly enjoy what this wine has to offer. Mudgee Wine Show 2007 A blend of Botobolar & Broombee Organic Fruit Colour Deep rose red Nose Very floral, violets & musk Palate Big juicy ripe fruit flavours. Even tannin balance and great mouth feel suitable for drinking young with big up front fuit. Light fresh cherry finish. Enjoy this summer with barbequed eye fillet steak. White Wines
	Botobolar's commitment to minimum input during the winemaking process is exemplified by these three white wines. All are made in a low-preservative style, they contain approx 40-60% less sulphur dioxide, added as an anti-oxidant, than most commercial white wines. These wines are recommended for everyday drinking for those who suffer mildly from allergies. All wines are suitable for medium term cellaring.

Sourced from Thistle Hill Organic Vineyard Mudgee Colour Bright gold with green tinges Nose Fresh Carnations and melons Palate Lime zest with sweet zippy fruit flavours. Rounded mouth feel with lingering fresh finish. Analysis Alcohol 12.00% Sulphur Dioxide ppm under 100	2008 Marsanne New Release Sourced from Botobolar's 37 year old organic vineyard Colour Pale Gold Nose Very floral, citrus blossom, honeysuckle with hints of gardenia Palate Refreshing lime oil and citrus flavours. Flavourful sweet fruit on the middle palate, vanilla hints with a long elegant finish. A great accompaniment with Australasian meals. Analysis Alcohol 14.% Sulphur Dioxide ppm under 100

Rain Goddess Dry Red Pinot Noir Shiraz & Cabernet Colour Deep brick red Nose Spicy cedar and cinnamon Palate Rich flavours of boiled raspberry lollies with cinnamon and spice over tones. Soft rounded tannins with a subtle finish make the wine very drinkable now. For divine pleasures enjoy with your next pasta night. No need to cellar, enjoy in moderation!
