Growing Season

The 2023 growing season was arguably the best yet for our ever-popular Shiraz. Despite a wet, mild spring that increased disease pressure, fruit set was excellent, with small, open bunches forming. A low-pressure harvest window allowed us to hang the fruit until varietal characters fully developed. The dry finish to the season was ideal for ripening, and the fruit was harvested on 16 March, ensuring optimal varietal purity.

Static ferment temp controlled, regularly oxygenated for yeast health and tannin polymerization. Co -inoculated with MLF bugs for early microbial stability and matured at 5° Celsius. Minimal wine movements prior to clarification to maintain primary notes. Fined with potato protein to improve the mouthfeel and find a balance between an acceptable softness and texture to work with the natural
tannin-lipid interaction that is well known to occur between red wine and meats.

Dark red, purple, and minor brick red in colour. Aromas of red and dark cassis, dark chocolate, clove spice, crushed herb, caramel, and blackberry jam. The palate is medium-bodied and has oak characteristics which provide length and structure.
