Growing Season

Vintage 2024 growing season began with average temperatures and rainfall. . Above-average rainfall in December supported healthy canopy growth and berry development. A mild December and January, combined with the reduced yields, led to harvest commencing two weeks earlier than the long-term average.
Static ferment temp controlled, regularly oxygenated for yeast health and tannin polymerization. Co -inoculated with MLF bugs for early microbial stability and matured at 5° Celsius. Minimal wine movements prior to clarification to maintain primary notes. Fined with potato protein to improve the mouthfeel and find a balance between an acceptable softness and texture to work with the natural
tannin-lipid interaction that is well known to occur between red wine and meats.
