Growing Season

The 2025 Vintage growing season in the Central Ranges began with average temperatures and high early spring rainfall. Yields were maintained despite a frost event in the third week of September. Above-average rainfall in November encouraged good canopy growth and berry size, followed by an optimal dry and mild period from December through to harvest. 

Static ferment temp controlled, regularly oxygenated for yeast health and tannin polymerization. Co -inoculated with MLF bugs for early microbial stability and matured at 5° Celsius. Minimal wine movements prior to clarification to maintain primary notes. Fined with potato protein to improve the mouthfeel and find a balance between an acceptable softness and texture to work with the natural
tannin-lipid interaction that is well known to occur between red wine and meats.

This wine is dark red, and purple in colour, while the nose has nuances of cherry blackberry, clove spices and chocolate and vanilla. The palate is medium bodied with hints of cherry coming through while exhibiting length and structure.
